How to do it:

Spread into a greased 8-in. circular baking pan. Bake for about 40 minutes, or until a toothpick inserted in the center comes out with moist crumbs (do not overbake). Cool 10 minutes before transferring from pan to a wire rack to cool fully.

Meanwhile, line an 8-in. circular basin (1-1/2 qt.) with foil. In a separate dish, pour 1 qt. ice cream; add the pistachios, almond essence, and, if desired, food coloring. Quickly distribute ice cream over the bottom and up sides of the foil-lined bowl, leaving the center empty; cover and freeze for 30 minutes.

In a small dish, mix cherries, cherry juice, rum, and the remaining 1 qt. ice cream. Pack ice cream into the hollow center of the 8-in. bowl; cover and freeze.

In a big heavy pot, mix egg whites, sugar, and cream of tartar. Beat for one minute on low speed with a hand mixer. Continue pounding over low heat until the egg mixture reaches 160°, about 8 minutes. Beat until stiff glossy peaks form and sugar is dissolved after transferring to a bowl.

Place brownie on an ungreased foil-lined baking sheet; top with an inverted ice cream mold. Remove foil. Immediately apply meringue over ice cream, sealing to borders of brownie. Freeze for up to 24 hours before serving.

Preheat the oven to 400°. Bake until meringue is lightly golden, 2-5 minutes. Transfer to a serving platter; serve immediately.

Drop by rounded tablespoonfuls 2 in. apart onto a baking sheet covered with cooking spray, producing 12 cookies; flatten slightly. Bake at 350° until set, 8-10 minutes. Remove to a wire rack to cool fully.

Spread 1/4 cup ice cream over the bottoms of half the cookies; top with the remaining cookies. Wrap each with waxed paper. Freeze until stiff, about 3 hours.
